Sweet Potato Cube Recipe

Whenever I want to have a snack or to meal prep for a day or two, it ends up most times being sweet potato cubes. Below is the 16 to minute recipe if you would like to try my go to way of making this delicious earthy tasting snack.

Ingredients:

  • Two medium sized sweet potatoes

  • Coconut oil — (Any oil will do if you prefer different)

  • Rosemary

  • Thyme

Utensils:

  • Frying pan

  • Spatula

  • Kitchen knife

  • Tablespoon

Directions:

  1. Wash and dry your sweet potatoes.

  2. Soften both potatoes. The way I do this is by putting them in the microwave with a few slits on top for 4 minutes each. Total 8 minutes. I try to get them to where I can at least cut them up. Just do not have the potatoes be mushy is all.

  3. Once softened, using a kitchen knife cut the potatoes into about half an inch to an inch cubes.

  4. Next on medium-high heat put 1 tablespoon of coconut oil in the frying pan and let the oil melt.

  5. When the oil has coated the pan, place the cubes of sweet potatoes in the pan.

  6. Move them around the pan for 4 minutes then sprinkle the dried rosemary and thyme to your taste over them.

  7. Stir the seasoned cubes for 4 more minutes, then turn off the heat and set them to cool on the side. Enjoy them whenever you desire!

With this recipe it is all to taste so you can add more or less herbs, to how soft or hard you would like you cubes. Another side note is that you can change herbs to salted or peppered instead of those mentioned. This is just the way I like to eat them whenever I crave a healthy snack. You can create them to however you like!
