Homemade Blackstrap Molasses Cookies

One of my favorite flavors in the world is molasses. For some reason it tastes like an old world memory or home feeling that makes me happy. The way I normally consume molasses is when it is baked into cookies. Over the years I have tried different recipes and have finally come up with my own recipe I love. Since it is the holiday season, I decided to share my simple recipe with you!

Ingredients:

  • 1 Large egg

  • 1 Cup of softened butter

  • 1 Cup of packed light brown sugar

  • 2 and 1/2 Cups of all purpose flour

  • 1/4 Cup of blackstrap molasses

  • 1/4 Cup of granulated sugar

  • 1 Teaspoon of vanilla extract

  • 2 Teaspoons of baking soda

  • 1 Teaspoon of ground cinnamon

  • 1 Teaspoon of ground ginger

  • 1 Teaspoon of ground clove

  • 1/2 Teaspoon of salt*

    * Occasionally I use salted butter and then forgo the teaspoon of salt. If you are not using salted butter or substituting butter then put the 1/2 teaspoon of salt in.

Supplies:

  • Depending on baking sheet size, use 1-2 baking sheets

  • Cooking spray or silicone backing sheet

  • Hand mixer or stand mixer with paddle attachment

  • Measuring Instruments: teaspoon and cup sets.

  • One spoon

  • Cooling racks

Directions:

  1. Set the oven to bake at 325 degrees.

  2. In a large bowl or stand mixer bowl, put in the softened butter, light brown sugar, vanilla extract, egg, and blackstrap molasses. Mix till the ingredients are all combined.

  3. Next put in the flour, baking soda, ground cinnamon, ground ginger and ground clove with the other ingredients and mix them all together.

  4. Once the batter is ready, take a spoon to separate 1 to 1.5 inch balls of batter. This recipe can make about 18-20 cookies, so create 18 or more balls.

  5. After roll the cookie dough around in the granulated sugar to coat them.

  6. Put each of the dough balls 1.5 to 2 inches apart on a greased or silicone covered baking sheet.

  7. Bake for 16-20 minutes or until set.

  8. When time is up, place the cookies immediately on a cooling rack to rest before eating.

Prep time: 15 minutes Bake time: 16-20 minutes Total: Approx. 35 minutes
